Teriyaki Chicken Bowl




If you know me, you know I am not an experienced cook. One recipe at a time y'all. I found this recipe on Six Sisters' Stuff YouTube channel. It seemed easy enough so I thought I would give it a shot. I am not the biggest Chinese food fan but Tyler really likes it so I thought I would test it out and impress him. I used my Instant Pot for this recipe! With the Instant Pot you can just throw in all the ingredients and go!


First, I used a small bag of carrots and cut (didn't cut my finger) them in half or not, up to you. After, I cut off a head of broccoli (I felt fancy buying a broccoli head). Next, add three chicken breasts to the bottom of your Instant Pot. After that, you just dump your veggies into the pot. Add 2 cups of brown rice (or whatever white rice). Next, add 2 1/2 cups of chicken broth. This will give enough liquid to cook the rice and chicken in the Instant Pot. Make sure the rice is submerged in the broth. I had some rice that wasn't and it was harder than the other rice. Put on the lid and make sure the dial is on sealing, not venting (wow I sound like a cooking expert at this point). My meat was thawed so I set timer for 20 minutes (it does take hot minute to build up pressure so just be aware of that). I did a quick release to let all the steam out at once (totally need to be offered a cookbook deal with all of my terminology). Dig out the chicken and shred it. I struggled with getting it out since it just falls apart so I ended up just shredding it in the bowl. If you do take the chicken out to shred it, put it back in and mix everything really well. You can add teriyaki sauce at this point, but I added it individually with each serving (also the sauce I bought seemed much more liquid like than I thought teriyaki sauce was). I also added the yum yum sauce (which is the best and you can buy at Walmart).


It is so delicious and was Tyler approved! It makes more than 2 servings so we both got to have it for lunch the next day too. Tyler added hot sauce instead of the teriyaki the second day and said it was so good! We will start using this recipe to meal prep and try and find alternative sauce to change things up and to be healthier. Although, it is a good fix for those hibachi cravings (which I have every week).


Recipe Ingredients

Head of broccoli

Small bag of carrots (cut in half or leave)

3 Chicken Breasts

2 cups Rice (I used 1lb. bag brown rice and used it all)

2 1/2 Chicken Broth

Teriyaki/Yum Yum Sauce (however much your heart desires)
